Can we freeze cupcakes ?….Yes, definitely !

I’ve had the above question for quiet sometime…and I decided to do some research.

Well, this is my first research actually, and these cupcakes turned out amazing. There’s no change at all in terms of flavor.

I’ve read thru google that most bakery freeze their cupcakes, well it’s easy for them since they must have a huge walk-in freezer. Unlike small home-baker who has tiny refrigerator (am I talking ’bout myself? – LOL)

Anyway, you can see below how I stored the cupcake in the freezer, as well as their look after being taken out of the freezer.

The cupcake surface was a bit sticky, cover it with your favourite frosting and you’re good to go.

Thaw them in room temperature for 1-2 hours, depends on where you live.

I baked these cupcakes using Elise’s Best Chocolate Cupcake Ever….you can find it in her youtube. I’m telling you, it is soo good. I drizzled the cupcake using my caramel sauce. You can see in my next post.

Coffee Cupcake with Chocolate Coffee Ganache

This cupcake taste soo good, it is moist, airy, not too sweet; suits well with the chocolate coffee ganache frosting.

As for the cupcake, I’m using recipe from Elise Strachan, my cupcake addiction with the addition of 2 tbs instant coffee powder dilute into the water. The recipe yields 12 cupcakes.

As for the frosting, i use half recipe of my chocolate buttercream and half  coffee ganache frosting, mix them together. See my previous posting for the recipe

Red Velvet Cupcake with Cream Cheese Frosting

I used rvc recipe from the  scran line. I expected to get moist cupcake since the recipe call for oil (no butter at all). The texture was dense, not sure what I did wrong.

I usually use the recipe from teh Ricke, and it never fails me.

For the frosting, as usual I use heavy cream instead of butter. I prefer that kind of taste instead of butter. The cream cheese frosting is awesome.

Cream Cheese Frosting recipe

250gr cream cheese ( i use Anchor), room temperature
300gr whipped cream ( i use Whippy Haan 100gr & 200ml iced water)
2 tbs powder sugar

Chocolate Cupcake with Chocolate Buttercream Frosting

My chocolate buttercream recipe :
125 gr unsalted butter
250-300gr shortening
30-40gr Hollman soft cream
25-30gr cocoa powder, sifted
15-20 tbs icing sugar
50-60 gr melted & cooled compound chocolate (couverture taste a lot better, but it won’t hold a nice shape in hot & humid weather)

This is sufficient enough to frost 18-24 cupcakes

Use your favourite chocolate candy as topping, such as kitkat, delfi, twix or bengbeng

Cappuccino Cupcake

I use cappuccino cupcake recipe from tatyana everyday food and omit the kahlua. It taste nice however i found the te xture was dense. Not sure what i did wrong.

Therefore i prefer using chocolate cupcake recipe from my cupcake addiction. They’re super moist

My coffee ganache frosting

I use 1:1 ratio of chocolate & cream. It was too liquid, I should’ve used 2:1 ratio. Therefore i mixed this again with 1/2 cup of chocolate buttercream (recipe in my previous post), it was more sturdy and the taste was great.

Recipe
300 gr compound chocolate
100gr whippy haan + 200gr water, add 2-3 tbs instant coffee to this water. Espresso would be nice to give strong coffee taste
2 tbs unsalted butter, room temp

Once it is cool down, let it sit for 3-4 hours and then whip.

Enough to frost 12-18 cupcakes

Sometimes i use half of ganache and mix with buttercream frosting. It taste amazing as well

Chocolate Nutella Cupcake

Akhir-akhir ini lagi sering bikin cake menggunakan Nutella..

I mean, who doesn’t love Nutella??

These Nutella cupcakes are dedicated to Nutella lovers

Earlier, I planned to use Nutella buttercream as the frosting, using Recipe from US, I bet they taste so delicious.

However, I don’t think it will look great as the frosting, because they will just easily melt due to hot weather in Jakarta.

Why? Because,  the recipe use butter (real butter) and not
shortening. If we use shortening, the frosting will stay firm throughout the day..

Taste wise, the one that use real butter will definitely taste amazing…. At the end of the day, it depends on our purpose

I’m using the recipe from Simplybaking.com

The taste came out delicious, however the texture is so dense, probably because it is using Nutella inside the butter – the dough came out so thick and looks heavy

Next, I’m going to try any chocolate cake recipe, take out the Nutella , and instead, I’m going to put the Nutella and fill it inside the cupcake..

Cupcake & Strawberry bouquet

Wanna make something special for mom’s bday this year. Made a cupcake bouquet which is slightly different than the previous one.

This time I added some fresh strawberries, turned them into roses shape, and some of them I coated and dipped into melted chocolate.

Bosan bikin rasa cupcake yang itu-itu saja? Cobain deh yang satu ini : Orange Cupcake

Berawal dari jalan2 ke supermarket, lihat harga orange lagi turun, langsung deh beli. Sampai rumah, ingin bikin cemilan, jadi teringat akan orange yg td dibeli, dapat ide bikin orange cupcake, langsung browsing cari resep.

Pilihat jatuh kpd resep dari blog mbak Nina, selain terlihat cukup mudah untuk dibuat, dan juga bahan2nya ada semua. Resep yg diadaptasi dari Amerika, as usual pakai measurement cup, jd gak pakai nimbang2 β€‹Λ†βŒ£Λ†βœ—Β‘βœ—Β‘βœ—Β‘ Λ†βŒ£Λ†

Berikut resepnya ya..

ORANGE CUPCAKE

Bahan:

2 1/2 cup terigu –> kira-kira 280 gr terigu protein rendah
2 1/4 sdt baking powder
1/2 sdt garam
4 butir telur
1 1/2 cup gula pasir (me: 220 gr)
1 cup minyak sayur–> kira-kira 240 ml minyak
1 cup jus jeruk segar –> kira-kira 240 ml jus jeruk segar -(me : air perasan dari 1 jeruk Navel + sirup jeruk ABC squash yg sudah dicampur dengan air, shg total jumlah keseluruhan adalah 240ml)

Zest of orange skin (tambahan dari aku — kulit orange diparut 1-2 buah — jangan sampai kena bagian yang putih yaa)

Topping :

Cream cheese di mix dengan whipped cream (krim yang sudah dikocok dan dicampur gula halus). Kalo whipped crem sudah manis, gula-nya jangan banyak2 yaa)

Potongan orange utk hiasan

Cara Membuat:

Panaskan oven dengan suhu 180’C. Siapkan loyang muffin yang telah dialasi kertas cupcake.

Campurkan terigu, baking powder dan garam. Ayak, sisihkan.

Kocok telur dan gula pasir hingga tercampur rata (me : kocok s/d kental berjejak), masukkan minyak dan jus jeruk (me: bergantian alias selang seling). Kocok dengan kecepatan rendah hingga halus.

Masukkan campuran terigu, kocok lagi hingga tercampur rata (me : aduk balik beberapa kali hingga terlihat rata, stlh itu dikocok dgn mixer speed rendah, supaya lebih rata — jgn lama2 yaa).

Masukkan orange zest (kulit orange parut), aduk rata

Sendokkan adonan ke dalam loyang, setengah penuh saja.

Oven selama 15-20 menit atau hingga matang (tes dengan menusukkan tusuk gigi, jika gak ada adonan nempel berarti sudah matang).

Dinginkan diatas cooling rack (rak kawat).

Setelah dingin, semprotkan cream cheese frosting dan beri hiasan potongan orange.

Bisa juga pakai topping Β buttercream atau taburin keju atau biarin polos juga mantappssfff πŸ˜€

Review :
– bikinnya gampaaang, dan cepettt
– teksturnya moist dan rasanya ennyaaakk, cake-nya wangi jeruk
– dimakan polos juga enak, tanpa frosting, shg orange-nya lebih terasa. Pakai cream cheese frosting juga enak, walaupun jadi agak menutup rasa si orange
– satu resep jadi 25-26 pakai cupcase diva
– paling enak langsung dimakan, tp kalau tidak habis, simpan dalam wadah tertutup, mis tupperware, lalu taruh di dalam kulkas, bisa tahan 2-3 hari. Permukaan cupcake akan terlihat agak ‘sticky / lengket.

Jangan lupa hangatkan dulu sebelum dimakan, agar lebih enak
